Easy Slow Cooked Cranberry Glazed Lamb Shanks

Put these tasty Cranberry Glazed Lamb Shanks on early and spend the rest of the day doing what you do best, or nothing at all. 

There is nothing quite like coming home and the end of a long day to a delicious slow cooked meal and these Cranberry Glazed Lamb Shanks will have your mouth watering the moment you walk in the door.  Spend a few minutes preparation for this hearty twist on traditional lamb shanks and you will be rewarded with a rich melt in your mouth sauce and meat that just falls off the bone.

Ingredients

  • 4 lamb shanks - frenched if you have a friendly butcher
  • Salt & freshly ground black pepper
  • 1 x 275g jar cranberry sauce
  • 125ml (1/2 cup) dry red wine
  • 2 tablespoons wholegrain mustard
  • 2 tablespoons fresh rosemary leaves
  • 2 garlic cloves, finely chopped

Instructions

  1. Season lamb shanks and brown in searing slow cooker or separate pan
  2. Combine remaining ingredients and whisk
  3. Add everything to the slow cooker and cook on low for 8 hours
  4. Remove lamb and reduce sauce to make glaze. I turned my searing slow cooker to sear and reduced the liquid by half and then strained through a fine sieve.
  5. Alternatively combine 1 tbs of corn flour and some cold water and stir through sauce, turn cooker on high and cook until sauce thickens

    Oh wow! This is so easy to prepare! I can just imagine the incredible depth of flavour with this. I adore lamb shanks, one of my favourite slow cooking cuts!

      The flavour is amazing Nagi!

      Would you believe up until recently I would only use lamb shanks for soup or to feed to my dog. Thank goodness I have changed my ways!
